for the gravy:

1 tablespoon olive oil

1 medium onion, diced

1 tablespoon flour

1 1/2 cups vegan milk

4 teaspoons vegan worcestershire sauce

4 teaspoons miso

2 teaspoons tomato sauce (ketchup)

1 teaspoon balsamic vinegar

1 teaspoon cracked pepper

a pinch of ground cloves

a pinch of ground nutmeg

Method

Preheat the oven to 350f (175c). Grease two baking sheets.

Bring a pot of water to the boil for the potatoes. Chop the potatoes into roughly 1 inch (2.5cm) cubes. When the water is boiling, add the potatoes, bring

back to the boil, reduce the heat and simmer for 20 minutes, or until fork-tender.
